Coconut Cookies
- 75 g dairy free butter
- 50 g white sugar
- 75 g light brown soft sugar
- 1 tsp vanilla extract
- 115 g flour
- 1 tsp cornstarch
- 1/2 tsp Baking powder
- Pinch of salt
- 1/2 tsp plant based milk
- 2 Rhythm 108 Creamy Coconut bars
Melt the butter and whisk together with the sugars for 5 minutes
Add the vanilla, flour, cornstarch, baking powder and salt until a smooth dough forms
Add the plant based milk if dough is too stiff
Chop up the Rhythm 108 bars and fold into the dough
Place balls of the dough onto a lined baking tray (we made 9)
Bake for 8-10 mins at 180 degrees Celsius
They will feel soft when removing from the oven
Leave to cool and they will crisp up
