Coconut Cookies




These deliciously gooey coconut cookies are filled with our better-than-Bounty Creamy Coconut bars. Our best-selling bars are the perfect chocolate chips for this recipe!

Coconut Cookies

Ingredients

  • 75 g dairy free butter
  • 50 g white sugar
  • 75 g light brown soft sugar
  • 1 tsp vanilla extract
  • 115 g flour
  • 1 tsp cornstarch
  • 1/2 tsp Baking powder
  • Pinch of salt
  • 1/2 tsp plant based milk
  • 2 Rhythm 108 Creamy Coconut bars

Instructions

  • Melt the butter and whisk together with the sugars for 5 minutes
  • Add the vanilla, flour, cornstarch, baking powder and salt until a smooth dough forms
  • Add the plant based milk if dough is too stiff
  • Chop up the Rhythm 108 bars and fold into the dough
  • Place balls of the dough onto a lined baking tray (we made 9)
  • Bake for 8-10 mins at 180 degrees Celsius
  • They will feel soft when removing from the oven
  • Leave to cool and they will crisp up
  • Enjoy!
