When I moved to Switzerland, I became fascinated with the culture of craftsmanship that I discovered in the small pastry shops that lined the main streets of every Alpine village.
With a love for sweet treats, but an equal concern for my own health and that of the planet, I wondered how this tradition could be used to create the treats we all love, but with modern, 21st century values and needs. Could we use this savoir-faire to make delicious, creamy chocolate but with fully plant-based ingredients? Could we make rich biscuits with simple and nourishing ingredients? And could we source ethically from farmers who protect the land?
